Protein Banana Bread Recipe
This recipe takes a morning tea classic, incorporating a serve of protein powder, in lieu of additional flour. The best part is that this recipe still tastes exactly as it should - like banana bread!

Wet ingredients
3 ripe bananas - mash 2, and reserve one for the top
2 eggs at room temperature
3 Tbl maple syrup
1/2C plain greek yoghurt
1 tsp vanilla extract
70g butter (or coconut oil), melted and cooled
Dry ingredients
1 C white flour
1/2 C wholemeal flour
1/4 C Roam Protein - I used Vanilla
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
Optional
Chopped walnuts
Chocolate chips
1. Preheat your oven to 180 degrees Celcius, and line or grease a loaf pan (I grease with butter and sprinkle some flour in the pan). Melt your butter and mash two bananas.
2. In a large bowl, mix the wet ingredients except for the butter/coconut oil. Leave this for later!
3. In a separate bowl, sieve and whisk the dry ingredients. Then add the dry ingredients to the wet ingredients, mixing until just combined. Don't over mix!
4. Fold in the melted and slightly cooled butter. Optional: fold in chopped walnuts or chocolate chips.
5. Pour the mixture into your loaf pan. Split your third banana down the middle and place on the top of the batter.
6. Bake for 45-55 minutes or until a knife comes out clean or with a few crumbs attached. Cool in the pan for a few minutes, then remove and transfer to a wire rack for cooling.
