Remember the bliss balls craze? It seemed like every recipe was dominated by Medjool dates. I like dates, but it got to the point where I would avoid bliss balls altogether because I was tired of all of them tasting the same!

In this recipe, we're bringing apricots into the spotlight, a nostalgic nod to the days when my mum would whip up a batch using crushed arrowroot biscuits, dried apricots, lots of butter and condensed milk. But we're giving it a healthy twist by swapping biscuits for oats and adding a dash of Roam Vanilla Protein for a power-up.

Ingredients

  • 1 C rolled oats
  • 30 g Roam Vanilla Protein
  • 3 Tbsp Nut butter of your choice
  • 2 Tbsp of honey, maple or golden syrup, or condensed milk
  • 100 g dried apricots, chopped
  • 1 tsp vanilla paste
  • Pinch sea salt
  • Desiccated coconut, for rolling

Instructions

  1. Start by chopping your dried apricots into small pieces. The smaller the pieces, the easier it will be to form your bliss balls later on.
  2. In a large bowl, combine the rolled oats, Roam Vanilla Protein, nut butter of your choice, your chosen sweet syrup, the chopped apricots, vanilla paste, and a pinch of sea salt.
  3. Mix everything together until well combined. If you find the mixture is too dry, you can add extra syrup or soak your apricots in hot water to make them juicier. Remember to drain the apricots before adding them to the mix.
  4. Once everything is mixed together, cover the bowl and let it chill in the fridge for about 30 minutes. This will make the mixture easier to handle when forming the bliss balls.
  5. After chilling, scoop out portions of the mixture and roll into balls. Coat each ball with desiccated coconut for that extra touch of flavor and texture.
